Wet Ingredients
- 2 eggs
- 3 bananas (the riper the better!)
- 3/4 cup greek yogurt
- 1/4 cup maple syrup
- 1 tsp vanilla essence
Dry Ingredients
- 1 scoop Metalab protein powder (banana pancake is a good option!
- 2 cups flour (I use almond/ oat flour)
- 1 tsp baking soda
- 2 tsp baking powder
- Dash of cinnamon
- Pinch of salt
- You can stir in whatever extra’s you like! I used walnuts but chocolate chips could be delish too.
- Mash your banana
- Add and mix wet ingredients to the mashed banana until combined
- Add dry ingredients slowly and mix until all combined
- Add mixture to muffin pan (should make 12 hearty muffins!
- Add to a preheated oven at 170 degrees celsius for approx 15mins but keep checking until golden on top
- Remove from oven and wait to cool, you can add a topping of dollop of peanut butter (my personal fav)
